Cajun Marinated Blackened Tofu with Sautéed Vegetables and Rice with Red Beans

Marinating Tofu:
Block ‘o’ Tofu (I prefer firm, your choice)
Couple TBL Cajun Seasoning (I’m lazy so I used a pre-mix. Home mixes are encouraged)
½ Cup Oil
Glug or 2 Apple Cider Vinegar

Marinade (Not Pictured : Apple Cider Vinegar)

A day or a few hours in advance mix up all of the ingredients except tofu. Slice the tofu. (I did 8 slices.) If you have a sealable container or put it back in the tofu tray, layer the tofu and pour the marinade over the top. Make sure it is all coated. Cover. Let it MARINATE in the fridge.


I let it marinate for 3 days...




When the tofu is all flavored up:
Rice
Can of Red Beans
Sweet Potato/Yam
Bell Pepper (Any)
Onion
Mushrooms
Asparagus
Sugar


Cook the rice according to package instructions.

Heat 1 Large pan over Med-High heat (Tofu), and another large pan with some oil (I use coconut) over Med (Veg.)

Chop all vegetables.

 Toss in the onions and mushrooms. Lay the sliced tofu in the hot pan. Let it sizzle. (A little smoke is good, means its BLACKENING!)

Put the Yam/Sweet potato in with the Mushrooms/Onions. Toss and cover

LET IT WERK. While that happens rinse your beans

Check tofu, when you have reached desired blackened-ness, FLIP!

Rice should be about done now…FLUFF IT. Then add the beans

Continue checking tofu until each side reaches its desired color.

Check the Yams/Sweet Potato…if they are near halfway done-ness add the remaining vegetables. TOSS and cover.

Tofu should be about done…when it is turn off the burner and just let it hang out while the veggies finish up.

About half this much sugar


Take some (VEGAN) sugar and sprinkle it over the vegetables. TOSS. Let it WERK.

REVIEW: Really freaking good. The tofu was on point; spicy and crispy on the outside, marinated tofu-riffic on the inside. Vegetables were incredible. A pinch of cinnamon would have been good on them. The rice and beans were meh. Carbs are meh. In the future I'll probably just skip the rice, and put the beans in with the vegetables. Or take the leftover marinade and make a reduction to pour over the rice so it is saucy. 

If you are like me and always make way too much food because you grew up in a household of 75 people and are always concerned with there being enough food or randoms dropping by…then take what’s left, heat it up (for the love of love please do it on the stove, toaster oven, or conventional oven; MICROWAVES SUCK) and make a wrap for lunch the following day…YUM! This would make a redonkulously good scramble too…Mmmm Food. I’m Fat.
